2 Tbsp GEM Extra Virgin Olive Oil
1 pound Soba Noodles, cooked and rinsed
1 pound Chicken, cooked and shredded
2 cups Bean Spouts, cleaned
2 Tbsp Green Onions, diced
2 Tbsp Roasted Peanuts, chopped
1 Tbsp Sesame Oil
4 Tbsp Peanut Butter
4 Tbsp Soy Sauce
1 Tsp Sugar
1 Tbsp Chili Paste
1 Tbsp Rice Wine Vinegar, unseasoned
1) Mix the GEM Extra Virgin Olive Oil in a medium bowl with chili paste, soy sauce, sugar, peanut butter, and rice wine vinegar.
2) Toss the cold soba noodles with some of the peanut sauce and plate. Toss the chicken and bean sprout with the remaining sauce and top each portion of noodles with them.
3) Garnish each plate with roasted peanuts and green onions.
