WHITE CHOCOLATE CHERRY RUM CAKES


WHITE CHOCOLATE CHERRY RUM CAKES

2/3 cup Olivari Mediterranean Classic Olive Oil
1 Sugar
2 each Eggs
1/2 cup Cherry Juice Concentrate
3/4 cup Rum
1 tsp. Vanilla Extract
2 and 3/4 cups AP Flour
1 Tbsp Baking Powder
1 tsp Baking Soda
1/2 cup Cream
1 cup White Chocolate, chopped
garnish Maraschino Cherries

1/2 cup Cherry Juice Concentrate
3/4 cup Rum
1 tsp. Vanilla Extract
2 and 3/4 cups AP Flour
1 Tbsp Baking Powder
1 tsp Baking Soda
1/2 cup Cream
1 cup White Chocolate, chopped
garnish Maraschino Cherries


1) In a mixing bowl, combine the sugar, Olivari Mediterranean Classic Olive Oil, eggs, cherry concentrate, rum and vanilla, mix well.
2) Sift the fl our, baking powder, and baking soda. Stir the dry ingredients into the wet ingredients.
3) Line cupcake pan with liners and fi ll 2/3 of the way with batter, place in 325 degree oven for 17-20 minutes.
4) Place a bowl over a boiling pot of water and add chunks of white chocolate, once chocolate is melted whisk in room temperature cream. Spread white chocolate ganache over cooled cupcake and place a whole cherry on top.
