3 tbsp GEM Extra Virgin Olive Oil
2 cups Orechiette Pasta, cooked
8 ounces Grape Tomatoes, halved
2 each Tuna, canned, 6 ounces drained
1/2 cup Yellow Onion, small dice
1 clove Garlic, minced
1/4 cup Parmesan Cheese
2 tbsp Parsley, chopped
1 tsp Black Pepper
1 tsp Salt
1) Heat the GEM Extra Virgin Olive Oil in a pan over medium high heat. Sweat the onions and garlic till translucent, and then add the grape tomatoes.
2) After a couple minutes add the tuna, season everything with salt and pepper, and cook for 3 minutes.
3) Add the pasta and toss to cover in the flavored oil.
4) Plate and sprinkle the top with parmesan cheese, and garnish with chopped parsley.
