1/4 cup GEM Extra Virgin Olive Oil
3 large Tomatoes
1/4 tsp Sugar
1/4 tsp Red Wine Vinegar
2 cups Rustic Bread, cubed
1/4 cup Basil, chiffonade
1/4 cup Salami, slivered
to taste Salt and Pepper
1) Cut the tomatoes in half and scoop out all of the seeds. Run tomatoes over a box grater and discard the skin.
2) Preheat the oven to 400 degrees. Place bread cubes on a baking sheet and bake for 6 minutes, stirring halfway through.
3) Mix the tomatoes with sugar and red wine vinegar. Toss the tomato mixture with the toasted bread cubes, basil and salt and pepper.
4) Place mixture in a glass, top with salami and drizzle with GEM Extra Virgin Olive Oil.
