1/4 cup Olivari Classic Olive Oil
2 cups whole-wheat flour
1 and 1/4 cup brown sugar
1 tbsp cinnamon
2 tsp baking powder
1/2 tsp baking soda
2 cups grated carrots
1 whole chopped apple
1 cup golden raisins
2 whole eggs
1/2 cup Apple butter
2 tbsp chopped walnuts
3 tbsp wheat germ
1) In a small bowl, whisk eggs and Olivari Classic Olive Oil.
2) In a large bowl, mix together remaining ingredients except for the wheat germ. Fold in the wet ingredients and fill muffin cups 3/4 full. Top it up with wheat germ. Bake at 375 °F for 20 minutes.
