Thinly slice Lacinato kale and add a drop of Olivari Olive Oil.
Massage the kale for a few moments to soften the fibers.
To roast the butternut squash – peel and cube , season with Olivari Olive Oil, a generous amount of salt and pepper, paprika, and cumin. Roast at 400 until tender (25-30 min)
For the halloumi
Slice and add to a pan. Fry in no oil until browned on both sides
For the vinaigrette
1 part balsamic to 3 parts oil.
Dash of mustard.
Dash of honey or maple syrup.
Add herbs of choice – Suggestion: sage & mint.
Combine with the chopped apple and pepita seeds and serve!
