Olivari Grape Seed Oil
For the Squash:
Cut squash into 1/2 inch slices
Remove seeds and guts from squash
Coat each slice of squash in flour, egg and breadcrumb mixture (follow this order)
Heat Olivari Grape Seed Oil in a frying pan until shimmering
Fry breaded squash in the oil until both sides are lightly golden (about 3 min each side)
Sprinkle coarse sea salt on top
Serve and dip in Chipotle Aioli

Chipotle Aioli
2 egg yolks
1 tablespoon Dijon mustard
juice of 1 lemon
½ garlic clove, minced finely
1 C Olivari Olive Oil
Pinch of Salt
½ TSP chili powder
1 TSP of smoked paprika
½ TSP ground chipotle powder
Mix all ingredients besides oil. Blend with an immersion blender slowly adding the oil until incorporated.
