1/4 cup Olivari Extra Virgin Olive Oil
1/4 cup butter
1/2 tsp salt
1 tbsp lemon juice
1/4 tsp pepper
1/2 tsp dry basil leaves
1/2 tsp dry parsley leaves
1/2 tsp garlic, minced
2 lbs. Mahi-Mahi fillets, cooked
1/2 cup oven roasted unsalted sliced almonds
1) In a saucepan, melt butter over low heat.
2) Add extra virgin olive oil, salt, lemon juice, pepper, basil, parsley and garlic and cook with mahi-mahi fillets for 3 minutes until cooked through and well-seasoned.
3) Sprinkle almonds over mahi-mahi fillets, then drizzle leftover cooked seasoned mixture over almonds and fish. Serve immediately.
