LEMON SALMON BURGER BALLS

2 Tbsp. Olivari Mediterranean Olive Oil
1 can, drained Salmon, flaked
2 Eggs
1/4 cup Parsley, chopped
1/4 cup Onion, chopped
1/4 cup Bread Crumbs
1 tbsp Chives

1) Preheat oven to 350 degrees.
2) In a large mixing bowl, combine 1 can (drained) flaked salmon with 2 eggs, 1/4 cup parsley, chopped onion, 1/4 cup dry bread crumbs, 2 Tbsp olive oil and 2 Tbsp. lemon juice.
3) Form mixture into balls about 1 to 1 1/2 inches in diameter. Let bake for about 20 minutes.
4) When fully cooked, top with Monterey jack cheese, put back in oven for about a minute to melt the cheese and finish with a dusting of chives.
