1/3 cup GEM Extra Virgin Olive Oil
1 whole Fennel bulb, sliced
1 and 1/2 cups Mesclun, salad mix
2 whole Oranges, segmented, juice reserved
1/4 cup Black Olives, pitted and sliced
1/8 cup Italian parsley, chopped
1 whole Lemon, juice
1) To make the dressing, mix the juice from the orange and the lemon with the GEM Extra Virgin Olive Oil.
2) To plate the salad, mix the greens with a little of the dressing and then toss the fennel, black olives, and orange segments separately with a little of the dressing as well. Then top with parsley.
