OLIVE OIL AND THYME MUFFINS


OLIVE OIL AND THYME MUFFINS

2/3 cup GEM Extra Virgin Olive Oil
2 cups Flour, all purpose
1 and 1/2 tsp Baking Powder
pinch Salt
1 cup Sugar, granulated
3 eggs Eggs, large
2 tbsp Thyme, fresh finely chopped

2 cups Flour, all purpose
1 and 1/2 tsp Baking Powder

1 cup Sugar, granulated
3 eggs Eggs, large
2 tbsp Thyme, fresh finely chopped


1) Preheat oven to 350 degrees. Line a 12-muffin tin with paper liners.
2) Combine flour, baking powder and salt in a bowl. In a large bowl, beat sugar and eggs until light and fluffy. Beat in extra virgin olive oil and gradually beat in flour mixture. Stir in thyme.
3) Pour batter into muffin tins. Bake 20 minutes or until a toothpick comes out clean. Cool on a wire rack. Serve with favorite toppings.
